BREAD, TOMATO AND TUNA SALAD

INGREDIENTS :

8 oz. coarse textured bread without the crust, 4 – 5 days old
3 medium size ripe tomatoes, roughly diced
1 medium size red onion, minced
12 large fresh basil leaves , shredded
10 pitted UNICO Medium Pitted Olives, quartered
3 Tbsp. Unico Red Wine Vinegar
3 garlic cloves
1/3 cup Gallo Extra Virgin Olive Oil
salt and freshly ground black pepper to taste
1 7 oz. can – Unico Tuna, drained
fresh tomato slices for garnish

PREPARATION: Break the bread and soak in a bowl of cold water 2 – 3 minutes. Drain and squeeze the bread dry, making sure to remove all of the water completely. Place the bread in a large bowl and break it up into small pieces with a fork. Add the tomatoes, onion, basil and olives.

In a small bowl, combine the vinegar, garlic, and olive oil and mix well. Season the salad with salt and several grindings of pepper. Add the dressing and mix well to combine. Add the tuna and mix gently into the salad. Place the salad on serving dishes, decorate with tomato slices and serve
