INGREDIENTS :

6 cups milk
Salt
3 scant cups (13 oz.) Unico Semolina
3 eggs
Freshly ground pepper
¾ c. freshly grated Parmesan cheese
¼ c. Unico Premium Extra Virgin Olive Oil
1 28 oz.can Unico Whole Tomatoes / Unico Premium San Marzano Type Tomatoes, drained
10 oz. mozzarella, thinly sliced
2 Tbsp. fine dry bread crumbs
1 Tbsp. chopped fresh oregano or 2 tsp. dried oregano

PREPARATION: Bring milk to boil with salt. Sprinkle semolina over surface, stirring all the time, and cook for 20 minutes. Let cool to lukewarm. Beat the eggs with a little salt and pepper. Add to semolina with the grated cheese and mix well. Coat a large round pizza tray with some of the oil. Turn semolina mixture into it and cover with drained tomatoes. Arrange the mozzarella slices on top and dust with breadcrumbs and oregano. Sprinkle with remaining oil. Preheat oven to 400 degrees. Bake pizza for 20 minutes. Transfer to a napkin lined plate and serve. Garnish with parsley if desired.
