MISTURA'S TUSCAN FAGIOLATA

INGREDIENTS :

1 can of Unico White Kidney Beans & Unico Red Kidney Beans, drained
1 can of Unico Chick Peas, drained
1 can of Unico Romano Beans, drained
150 g of carrots, diced square
15 g of celery, diced square
150 g of white onions, diced square
2 cans of Unico Diced Tomatoes
1 can of Unico Tomato Paste
20 g of garlic finely chopped
1 pinch of dry thyme, dry sage & dry rosemary
2 bay leaves & salt & pepper to taste
50 mL of Unico Premium Extra Virgin Olive Oil

PREPARATION: Drain all excess water from your Unico beans & chickpeas then rinse lightly under cold water. Chop onions, carrots & celery into small cubes. Sautee all the vegetables and herbs in oil and cook until translucent. Add the tomatoes & the water (or the stock). Bring to a boil and add the beans. Simmer at high heat for about 15 minutes. Skim if necessary - taste for correct seasoning and serve.
