Unico Recipes




14 oz (398 ml) of canned Unico Chick Peas, drained
14 oz (398 ml) of canned Unico Red Kidney Beans, drained
14 oz (398 ml) can Unico Lima Beans, drained
1 small red onion, thinly sliced
6 oz of baby green beans, trimmed
2 Unico Roasted Pepper Strips


4 tbsp of Gallo Pure Olive Oil
2 tbsp of cherry vinegar
2 tbsp of lemon juice
1 tsp of light brown sugar
1 tsp of chili sauce (optional)

PREPARATION: Put the canned beans in a large mixing bowl. Add the sliced onion and mix together. Cut the baby green beans in half and cook lightly in salted, boiling water for about 8 minutes until just tender. Refresh under cold water and drain again. Add the mixed beans, onions and peppers.

To make the dressing, place the oil, cherry vinegar, lemon juice, sugar and chili sauce (if using) in a screw top jar and shake vigorously. Pour the dressing over the mixed bean salad and toss well. Leave to chill in the refrigerator until required.

You can also use any combination of beans in this salad. For a distinctive flavour, add 1 teaspoon of curry paste instead of chili sauce.
