TUSCAN SALAD TOSS

Serves:


INGREDIENTS :

8 oz of Tuscany field greens salad blend
6 oz of mozzarella cheese, cubed (1 1/2 cups)
½ cup of UNICO Medium Pitted Olives, halved
¼ cup of coarsely chopped red onion
¼ cup of pine nuts
1 medium tomato, cut into thin wedges
1 small zucchini, thinly sliced
15 oz of canned Unico Red Kidney Beans, drained and rinsed

DRESSING :

1/3 cup of Unico Premium White Balsamic Vinegar
1/3 cup of Unico Premium Extra Virgin Olive Oil

PREPARATION: In large bowl combine all ingredients and toss gently.

COOK'S TIP: Use your favorite salad greens in place of the Tuscany field greens. Try slivered almonds or toasted walnuts in place of pine nuts.

This no-cook salad makes a refreshing supper for a hot summer day. Garlic breadsticks, crisp rosé wine and red and green grapes finish the menu.
