POTATOES WITH OLIVES AND ANCHOVIES

INGREDIENTS :

2 lbs (1 kg) of baking potatoes, peeled
¼ cup (60 ml) of Unico Premium Extra Virgin Olive Oil
3 oz (90 g) of UNICO Medium Pitted Olives, chopped
1 tbsp of Unico Capers, drained and chopped
6 Unico Flat Fillets, Anchovies, chopped
salt and freshly ground pepper
1 tbsp of chopped parsley

PREPARATION: Cut the potatoes into wedges. Heat the oil in a cast iron skillet over medium- high heat. Add the potatoes. Sprinkle with the olives, capers and anchovies. Season with salt and pepper.

Cover, reduce heat to medium and cook for 30 minutes, stirring gently from time to time but taking care not to break up the potatoes. Scatter the parsley over the potatoes and serve.
