CENTRO'S SMOKED SALMON

Serves:


INGREDIENTS :

8 slices of Marc of Excellence smoked salmon
½ can of Unico Capers
1 can of Unico Red Kidney Beans
2 shallots, finely chopped
2 mangoes, cut in brunaise (small cubes)
1 ½ cup of chopped chives

Vinaigrette :

1 cup of Unico Red Wine Vinegar
1 cup of Gallo Pure Olive Oil
Sea salt and pepper to taste

PREPARATION: In a mixing bowl, mix together the beans, capers, shallots, mangoes and 1 cup of chopped chives. Set aside. In another mixing bowl, whisk red wine vinegar and olive oil together. Season to taste with sea salt and pepper. Before serving, add the vinaigrette to the bean mixture. Season to taste. In the centre of four individual plates, place the bean mixture on top of the smoked salmon slices in an attractive manner. Garnish with the remaining 1/2 cup of chives.
