SEAFOOD PIZZA

INGREDIENTS :

5 oz standard pizza base mix
4 tbsp of chopped fresh dill, or 2 tbsp of dried dill
fresh dill, to garnish

SAUCE :

1 large red bell pepper
14 oz of canned Unico Herb Spiced Diced Tomatoes
3 tbsp of Unico Tomato Paste
salt and pepper

TOPPING :

12 oz of assorted, cooked seafood
1 tbsp of Unico Capers, drained
1 oz of UNICO Medium Pitted Olives, drained
3 oz of low-fat mozzarella cheese, grated
1 tbsp of grated fresh parmesan cheese

PREPARATION: Preheat the oven to 400°F. Place the pizza base mix in a bowl and stir in the dill. Make the dough according to the instructions on the packet. Press the dough into a round pizza shape; measuring 10 inches across on a cookie sheet lined baking parchment. Set aside to rise.

Preheat the broiler to hot. To make the sauce, halve and deseed the bell pepper and arrange on a broiler rack. Cook for 8-10 minutes until softened and charred. Leave to cool slightly, peel off the skin and chop the flesh.

Place the tomatoes and bell pepper in a pan. Bring to a boil and simmer for 10 minutes. Stir in the tomato paste and season. Spread the sauce over the pizza base and top with the seafood. Sprinkle over the capers and olives, top with the cheeses, and bake for 25-30 minutes. Garnish with sprigs of dill and serve hot.
