SOTTO SOTTO'S RISOTTO DELLA SIGA

INGREDIENTS :

1 onion, chopped
1 cup of Unico Arborio Rice
1 cup of white wine
fresh porcini mushrooms
2 cups of warm water
2 tsp. saffron
1 cup parmesan cheese
4 tbsp. Unico Premium Extra Virgin Olive Oil
basil
salt & pepper

PREPARATION: Pour oil in pan, and sautee onions, and rice for 2 minutes. Add the wine and mushrooms (heavy simmer), and add 2 cups of warm water. Continue adding water as the rice absorbs it. When rice is ready, add cheese, saffron and little olive oil on top when serving. Garnish with basil and salt and pepper to taste.
