SPAGHETTI WITH MOZZARELLA AND FRESH HERBS

INGREDIENTS :

1 lb. (450 g) Unico Spaghetti / Unico Spaghettini
1/3 cup Unico Premium Extra Virgin Olive Oil
2 garlic cloves minced
3 Unico Flat Fillets, Anchovies, chopped
1 Tbsp. minced Unico Marinated Artichoke Salad
salt and freshly ground pepper
1/3 cup loosely packed roughly chopped herbs (basil, oregano, mint, thyme and parsley)
½ lb. fresh mozzarella, cut into small cubes

PREPARATION: Cook pasta as directed on package. Keep 1 cup of the pasta cooking water. Heat the oil in a large skillet over medium heat. Add the garlic, anchovies and sun – dried tomatoes and stir for about 1 minute.

Drain the pasta and place it in the skillet. Season lightly with salt and generously with pepper. Add about ½ of the pasta water (reserved) and fresh herbs. Stir well over low heat to combine. Add mozzarella and a bit more pasta water if needed. Stir once or twice. Taste. Adjust. Serve.
