LINGUINE WITH FRESH TOMATOES & GARLIC

INGREDIENTS :

1 lb. Unico Linguine

FOR THE SAUCE :

3 Tbsp. Unico Premium Extra Virgin Olive Oil
2 cloves garlic
2 Tbsp. chopped fresh italian parsley
2 19 oz. cans Unico Diced Tomatoes, drained
1/3 cup chicken broth, if needed
salt and freshly ground black pepper

PREPARATION: For the sauce, heat the oil in a pan over medium heat. Add the garlic and parsley, and stir a few times. Add the tomatoes, and season with salt and pepper. Reduce the heat to medium low and cook, uncovered, stirring occasionally for 10 – 15 minutes. Put the sauce through a food mill or in a food processor. Return the sauce to the pan and keep it warm over low heat while you cook the pasta. If the sauce is too thick, stir in some chicken broth.

FOR THE PASTA: Bring a pot of water to a boil. Add 1 Tbsp. of salt and cook linguine according to package.

Drain the pasta and pour into heated serving dish. Add the sauce. Mix well. Taste and adjust the seasoning.
