NORTH 44 GAZPACHO SOUP

INGREDIENTS :

1 cucumber, sliced
1 large Spanish onion, sliced
1 red pepper, sliced
1 yellow pepper, sliced
6 plum tomatoes blanched, peeled and chopped
1 28 oz. can of Unico Plum Tomatoes (squeeze tomatoes, reserve juice)
1 bunch of chopped coriander
1 bunch of chopped green onion
2 oz. Unico Red Wine Vinegar
1 tsp. chopped garlic
1 tsp. Serano pepper
salt & pepper to taste
1 oz. of tequila

PREPARATION: Slice cucumber, Spanish onion, red pepper, yellow pepper and set aside. Peel and chop 6 blanched plum tomatoes, remove tomatoes and squeeze excess juice from one can of Unico plum tomatoes - saving the juice. Finely chop the coriander, green onions and garlic.Mix all ingredients together and puree in a food processor. Chill for 2 hours and serve.
