POLPETE DI RISO

INGREDIENTS :

1 ½ cups of Unico Arborio Rice
2 tbsp. Gallo Extra Light Olive Oil
1 onion, chopped
1 green pepper, chopped
16 oz. pork, cut into small pieces
1 can of Unico Diced Tomatoes
2 oz. red wine
4 oz. parmesan cheese grated
6 oz. mozzarella cheese, chopped
2 tbsp. parsley
½ tbsp. salt
1 pinch of pepper
6 eggs lightly beaten
4 oz. flour
1 cup breadcrumbs
Unico Vegetable Oil for frying

PREPARATION: Cook rice and set aside. Heat oil in frying pan and cook onion and green pepper for 5 minutes. Add meat and mushrooms and cook for another 5 minutes, then add the tomatoes and wine and simmer for 10 minutes. Take off the heat and add the cooked rice, cheeses, parsley, seasonings and 2 eggs. Mix well and form into egg shapes with the palm of your hands. Dip into flour, then beat the eggs. Coat thoroughly with breadcrumbs and deep-fry at 375°/190°C until golden brown. Drain on paper towels and serve.
