STUFFED ARTICHOKES

INGREDIENTS :

4 Unico Artichokes In Brine, Whole
1 juice of lemon
2 eggs
½ tbsp. salt
pepper (pinch)
4 oz parmesan cheese, grated
2 Unico Flat Fillets, Anchovies, minced
1 tbsp. parsley chopped
4 oz breadcrumbs
4 tbsp. Gallo Extra Light Olive Oil
4 oz white wine

PREPARATION: Cut 1" or 2 cm off the tops of the artichokes, and the spiky ends off the other leaves. Remove tough bottom leaves and cut the stems so the artichokes can stand upright, then rub all the cut areas with lemon juice to prevent discoloration. Remove the chokes by spreading the leaves and scooping out the furry part with a spoon. Beat the eggs in a bowl, then add the salt, pepper, cheese, anchovies, parsley and breadcrumbs. Mix well and then stuff into the center and around the leaves of the artichokes.

Stand the artichokes up in a baking dish and sprinkle with the oil and wine. Cover the dish and place in a preheated 375°F./190°C oven for 30 minutes. Uncover and cook the artichokes for 10-15 minutes more until the leaves come off easily. Serve immediately.
