CHICK PEA ANTIPASTO

INGREDIENTS :

19 oz. Unico Chick Peas, drained
1 cup cooked ham (use a thick slice, cut into cubes)
1 cup cooked broccoli, cut into bite size pieces (do not overcook, must be crunchy)
1 large stalk celery, chopped coarsely
¼ cup Unico Stuffed Manzanilla Olives, sliced
1 Unico Whole Roasted Peppers
1 spring parsley, chopped finely
1 small clove garlic, chopped finely or pressed
1 small onion, chopped finely
4 Tbsp. Unico Vegetable Oil
4 Tbsp. Unico White Wine Vinegar
salt and pepper to taste

PREPARATION: In a large bowl combine all ingredients. Toss gently. Cover and chill before serving.
