PITA TRIANGLES WITH HUMMUS & ROASTED RED PEPPER

INGREDIENTS :

3 Tbsp. Gallo Pure Olive Oil
1 Tbsp. basil, chopped
½ tsp. kosher salt
5 whole wheat pita pockets
2 Unico Whole Roasted Peppers

HUMMUS :

15 oz. Unico Chick Peas
¼ c. lemon juice
½ Tahini (sesame paste)
1 Tbsp. olive oil
1 clove garlic, minced
½ tsp. cumin, ground
¼ c. cilantro, reserve some for garnish
salt and pepper

PREPARATION: Preheat oven to 450 degrees. Cut each pita into 8 wedges. Toss wedges with basil, salt and oil. Place evenly on baking sheets and bake for 4 minutes on each side.

Combine all ingredients in food processor until creamy and smooth. Adjust seasoning. Spread hummus on pita triangles. Criss cross strips of Unico Roasted Red Peppers over the top and garnish with cilantro.
