WHITE BEAN & ROASTED RED PEPPER SPREAD

INGREDIENTS :

1 cup Unico White Kidney Beans (drained)
¼ cup Unico Whole Roasted Peppers
1 garlic clove or 1 Tbsp. roasted garlic
2 Tbsp. fresh lemon juice to taste
2 Tbsp. chopped fresh parsley
salt and ground black pepper to taste

PREPARATION: Combine beans, roasted peppers, garlic and 2 Tbsp. lemon juice in a food processor and puree until smooth. Stir in the parsley and add salt and pepper to taste. Add more lemon juice (if you like) whirl for a few moments until just combined. Chill for at least 30 minutes to allow flavours to blend.

You may add 1 – 2 Tbsp. chopped fresh basil / dill to finish spread – if desired.

Serve as a sandwich filling with sliced tomatoes, chopped black olives and fresh leafy greens. Serve on thinly sliced, toasted baguette rounds or as a dip with crudites.
